Step 1: Gather Ingredients

Typical ingredients: all-purpose flour, unsalted butter, sugar (for sweet doughs), egg yolk, salt, and optional flavorings.

Step 2: Measure Accurately

Use a kitchen scale to ensure precise ratios; tart dough is sensitive to hydration and fat content.

Step 3: Cream or Cut Fat

Pâte sucrée: cream butter and sugar, then add egg yolk and flour. Pâte sablée: cut butter into flour until sandy texture forms, then add sugar and egg yolk.

Step 4: Form Dough

Gently combine ingredients into a cohesive dough. Avoid overmixing to prevent toughness.

Step 5: Chill Dough

Wrap in plastic and refrigerate for at least 30–60 minutes to relax gluten and firm fat.

Step 6: Roll and Line Tart Pan

Lightly flour surface and roll evenly. Carefully transfer to tart pan without stretching dough. Trim edges as needed.

Step 7: Blind Bake (If Needed)

Line tart shell with parchment and add weights (beans or pie weights). Bake until edges are golden and shell is partially cooked.

Step 8: Cool and Fill

Remove weights and parchment, allow shell to cool completely, then fill according to recipe.
