Overview of Yeast

Active Dry Yeast

Comes as dehydrated granules. Needs to be dissolved in warm water before use. It provides a slower, steady fermentation suitable for many bread recipes.

Instant Yeast

Also called “rapid-rise” yeast. Can be mixed directly with dry ingredients without proofing. Produces faster fermentation and is convenient for quick breads.

Fresh Yeast

Also known as cake yeast. Soft and moist, it has a short shelf life but gives excellent flavor and strong rise. Requires refrigeration and careful handling.
