What is Autolyse?
Autolyse is a pre-kneading technique in bread making where flour and water are mixed and allowed to rest before adding salt and yeast. This process helps gluten develop naturally, making the dough easier to knead and resulting in better texture and flavor.
Benefits of Autolyse
- Improves dough extensibility
- Reduces kneading time
- Enhances gluten network formation
- Improves crumb structure and flavor
How to Perform Autolyse
- Measure and combine flour and water in a mixing bowl.
- Mix until all flour is hydrated.
- Cover the bowl and let the dough rest for 20–60 minutes.
- After resting, add salt and yeast before proceeding with kneading.
Next Steps
Once autolyse is complete, you can continue with hand kneading, stretch & fold, or using a spiral mixer depending on your recipe. Recognizing the windowpane stage ensures proper gluten development before fermentation.
