Introduction to Hand Kneading
Hand kneading is a fundamental bread-making technique where the baker uses their hands to develop the gluten network. This process ensures proper elasticity, structure, and texture in the dough.
Benefits of Hand Kneading
- Direct tactile feedback on dough consistency
- Improves gluten development naturally
- Allows for controlled shaping and texture
- Essential skill for artisanal baking
Steps to Hand Knead Dough
- Lightly flour a clean work surface.
- Place dough on the surface and fold it over itself.
- Push dough away with the heel of your hand and fold it back.
- Rotate dough 90 degrees and repeat for 8–10 minutes until smooth and elastic.
- Check for windowpane test to ensure proper gluten development.
Next Steps
After mastering hand kneading, students can advance to stretch & fold, slap-and-fold techniques, or using a spiral mixer to handle larger batches efficiently.
