Preferments are pre-fermented doughs that enhance the flavor, texture, and shelf-life of breads. Common types include Poolish, Biga, and Levain.
Poolish
- Hydration: 100% (equal flour and water by weight)
- Fermentation time: 12–16 hours at room temperature
- Results: Light, open crumb and mild flavor
Biga
- Hydration: 50–60% (stiffer than Poolish)
- Fermentation time: 12–16 hours at room temperature
- Results: Nutty flavor and chewy texture, typical for Italian breads
Levain
- Uses sourdough starter as a base
- Hydration: 60–100%, depending on desired dough consistency
- Fermentation: 8–12 hours or until bubbly and active
- Results: Tangy flavor, strong structure, ideal for rustic and artisan breads
