Foolproof Ciabatta Bread
Soft, airy, and crusty Italian ciabatta bread made easy at home.
Ingredients
- 1 ½ cups warm water (110°F / 43°C)
- 2 ¼ tsp active dry yeast (1 packet)
- 1 tsp sugar
- 3 ½ cups bread flour
- 1 ½ tsp salt
- 2 tbsp olive oil
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let sit 5-10 minutes until foamy.
- Add bread flour and salt; mix until dough forms. Dough will be very sticky.
- Knead 8-10 minutes on a floured surface or use a stand mixer with dough hook. Dough should be soft and elastic.
- Transfer to a greased bowl, cover, and let rise 1-2 hours until doubled.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and drizzle with olive oil.
- Gently shape dough into a rectangle without deflating. Place on prepared sheet.
- Let dough rest 20-30 minutes. Sprinkle flour on top for a rustic look.
- Bake 20-25 minutes until golden brown and hollow-sounding when tapped.
- Cool on wire rack before slicing. Enjoy fresh or toasted.
Tips for Success
- Ciabatta dough is wetter than most breads; handle gently to retain air pockets.
- Use plenty of flour on your hands and surface when shaping.
- Drizzling olive oil on the baking sheet prevents sticking and adds flavor.
- Cool completely before slicing for best texture.
