Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar (optional)
- 1 cup milk or buttermilk
- 1/3 cup melted butter
- 1 large egg
- 1 1/2 cups shredded sharp cheddar cheese
Instructions
- Preheat oven to 400°F (205°C). Grease a baking pan or cast-iron skillet.
- In a bowl, mix cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, whisk milk, melted butter, and egg.
- Combine the wet and dry mixtures. Fold in the shredded cheddar.
- Pour the batter into your prepared pan and bake for 20–25 minutes, until golden and cooked through.
