Chocolate Chip Chocolate Muffins

Ingredients
- 1 ¾ cups all-purpose flour
- ½ cup cocoa powder
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Directions
- Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, oil, eggs, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in chocolate chips gently. Do not overmix.
- Divide batter evenly among muffin cups, filling each about ¾ full.
- Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
- Let muffins cool for 5 minutes, then transfer to a wire rack to cool completely.
Recipe Notes
- For extra chocolate flavor, sprinkle a few chocolate chips on top before baking.
- Use mini chocolate chips for more even distribution in the muffins.
