Overview
Strawberry Lemonade Quick Bread is a sweet, tender loaf filled with fresh strawberries and topped with a bright lemon glaze. It’s perfect for a refreshing breakfast, brunch, or afternoon snack.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk or buttermilk
- 1 tsp vanilla extract
- 1 1/2 cups fresh strawberries, chopped
- Zest of 1 lemon
Lemon Glaze: 1 cup powdered sugar, 2–3 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- Whisk together flour, baking powder, baking soda, and salt.
- Mix sugar, melted butter, eggs, milk, and vanilla in a separate bowl.
- Combine wet and dry ingredients until just mixed; do not overmix.
- Fold in chopped strawberries and lemon zest gently.
- Pour batter into prepared pan and smooth the top.
- Bake 50–60 minutes until a toothpick comes out clean.
- Cool 10 minutes in pan, then transfer to wire rack.
- Mix powdered sugar and lemon juice to make glaze and drizzle over cooled bread.
Tips
- Use fresh strawberries for best flavor; do not overmix to avoid crushing berries.
- Lightly coat berries with flour to prevent sinking.
- Adjust glaze consistency with more or less lemon juice.
- Serve slightly warm for extra comfort and flavor.
